Spotlight Spice: Coratina Extra Virgin Olive Oil
Native to Italy, but grown today throughout the world, Coratina olive trees grow faster and more erect than others. Coratina olives are harvested early, when the olives start to turn black at the tip - or, in warmer areas, when the olives turn from green to yellowish.
Coratina olives are prized for their high polyphenol level and produce a medium to robust oil which is well-balanced with a peppery finish.
This particular harvest comes to us from Peru and has a smooth and well-rounded flavor. It's got an herbal and grassy aroma and taste and you'll pick up notes of tomato vine, green banana, mint, black pepper, and maybe even a hint of cinnamon.
The high-quality oil is great on simple dishes like Caprese salad, bruschetta, and grilled veggies, and also makes a great base for marinades and vinaigrettes. We particularly enjoy it with our Grapefruit White Balsamic Vinegar and Passion Fruit Jalapeño Fruit Vinegar.
