Parmesan is a family of hard grating cheeses made from cow's milk, rich in umami flavors, and a favorite among Americans for use in pastas, salads and pizzas.
Truffles are rare, extraordinarily delicious fungi. The 18th-century French gastronome Brillat-Savarin (the original fun guy -- get it? Fungi? Fun guy? No?) called these truffles "the diamond of the kitchen." Truffles are held in high esteem in French, Spanish, northern Italian and Greek cooking.
Black truffles have the strongest flavor of all the truffles and also have a pungent aroma. The smell of black truffles is so strong that it will even permeate eggs in their shells, if they are stored together, and changes the taste of the eggs.
Put the two flavors together, and you've got Truffled Parmesan Rub: black truffle-infused Parmesan goodness that will improve anything thing you are cooking. (Well, maybe not those cupcakes.)
Ingredients: Black truffle-infused salt (salt, black truffle), parmesan cheese (pasteurized part-skim milk, cheese culture, salt, enzymes), sodium phosphate, salt, lactic acid, corn starch, dried cane syrup (dried cane juice, cornstarch), black garlic powder, natural flavor, spices, garlic powder, and onion powder. I use this over freshly popped popcorn, melt butter with some of this seasoning and pour over the popcorn also sprinkle the seasoning on the popcorn after you add the butter. Yummy
