Jerk is traditional Jamaican technique in which meats are dry-rubbed or wet marinated with a very hot spice mixture called Jamaican jerk spice. The word jerk refers to both the spice rub and to the particular cooking technique. Traditionally, jerk chicken, pork, or fish was smoked in pit fires over wood charcoal, and later using repurposed oil barrels. Nowadays, Jamaicans grill jerked meats with steel drum jerk pans.
