INGREDIENTS
6 Tbsp unsalted butter
2 Tbsp sugar
2 Tbsp soy sauce
2 Tbsp hoisin sauce
1 Tbsp Roasted Sesame Oil
3/4 tsp Garlic Powder
3/4 tsp Ginger Powder
3/4 tsp Cayenne Pepper, ground
2 tsp Wasabi Powder
6 Cups (6 oz) rice cereal squares
1 (5 oz) can chow mein noodles
1 Cup minature pretzels
1 (3 oz) package Asian Cracker mix (optional)
2 Cups salted roasted cashews or dry-roasted peanuts
1 Cup dried peas

STEPS
Preheat oven to 250°F with racks staggered in upper and lower thirds of the oven space.

Melt butter in a small saucepan over medium-low heat. Whisk in sugar, soy sauce, sesame oil, garlic powder, ginger, wasabi powder, and cayenne. Remove mixture from heat.

Combine dry ingredients: rice cereal, chow mein noodles, Asian snack mix, cashews/peanuts and peas in a very large bowl. Drizzle dry ingredients with butter-spice mixture, and toss well to coat. Spread snack mix evenly over 2 large (18- by 13-inch) rimmed sheet pans.

Bake snack mix, stirring every 15 min, for a total of 1 hour.

Cool snack mix completely in baking pans on cooling racks. Store cooled snack mix in an airtight container. You can re-toast mixture in the oven to “re-crisp” before serving if needed.
