This snack mix recipe, submitted by Matthew Phoenix, won the first place ribbon in the AllSpice Snack mix savory contest at the 2016 Iowa State Fair. The recipe also won the blue ribbon for best overall snack mix (the “grand prize” best in show for both categories). This was a great balance of snack mix and truffle along with other herbs and spices.

INGREDIENTS

2 oz Wheat Chex
2 oz Rice Chex
2-1/2 oz Bugles
4 oz rye chips
4 oz Italian Four Cheese Cheez-its
1 Cup mixed nuts
12 Tbsp (1-1/2 sticks) butter

Spice mix
2 tsp Worcestershire powder
1 Tbsp Garlic, Granulated
1 tsp Onion, Granulated
1/4 tsp Tamarind Powder
1/2 tsp Oregano Mediterranean
4 Tbsp Truffled Parmesan Rub
2 tsp Cheddar-Head Seasoning

STEPS
Preheat oven to 250° F. Combine all dry ingredients in a large bowl, tossing lightly.

Melt butter in skillet. Add all spices, except the Truffled Parmesan Rub and Cheddar-Head Seasoning.

Stir melted butter/spice mixture into he dry ingredients and toss to thoroughly coat the dry ingredients. Stir in 2 Tbsp of the Truffled Parmesan Rub.

Spread seasoned mixture on a rimmed baking sheet and bake 1 hour, stirring every 15 minutes.

Remove baking sheet from oven and sprinkle snack mix with the remaining Truffled Parmesan Rub and Cheddar-Head Seasoning. Transfer snack mix to a serving bowl and serve.
