INGREDIENTS

2 6 oz tilapia filets
1 Tbsp Thai Rub
A pinch of Cayenne pepper
1/2 tsp salt
Non-stick cooking spray
Extra Virgin Olive Oil

STEPS:
In a small bowl, combine the Thai Rub, Cayenne and salt.

Spray each tilapia fillet with a light coating of cooking spray, and then sprinkle with spice mixture. Use your fingers to pat/rub the spices into the fish (do this on both sides of each fillet).

Heat a medium non-stick sauté pan over medium-high heat and add small amount of Extra Virgin Olive Oil. Add seasoned tilapia fillets to the heated, oiled skillet, and cook about 2-3 minutes on each side, or until just cooked through.  Serve immediately.
