In a mixing bowl, combine cream cheese, diced apple, and spices. Blend well. Fold 1/2 Cup pecans into the mixture; blend until well distributed. Use a spatula to form the nut-fruit-spiced cheese mixture into a ball, and roll the ball in remaining pecans to coat. Transfer cheese ball to a plate lined with a piece of waxed paper, and refrigerate until cheese is firm. Remove from refrigerator, and remove waxed paper from under cheese ball. Serve with pretzels or graham crackers.
Make ahead: can be made several days ahead. Cover cheese ball in cling wrap before refrigerating, if you make more than a few hours before serving.
