8 oz thin-sliced bacon
2 Tbsp Maple Sugar Powder
2/3 Cup Organic Cocoa Powder, Dutch Processed
1-1/2 Cup granulated sugar
1/2 Cup powdered sugar
1 tsp Smoked Bacon Salt
1 Cup all purpose flour
3 large eggs
1/2 Cup Single-Varietal Extra Virgin Olive Oil
2 Tbsp water
Preheat the oven to 350°F. Oil an 8-inch square baking pan.
Spread the bacon in a single layer on a large, rimmed baking sheet, and sprinkle it liberally with Maple Sugar Powder, coating pieces evenly.
Bake the bacon for 20 to 25 minutes, or until pieces are crisp but not totally browned. Remove baking sheet from the oven, and transfer bacon to a plate or rack to cool. When the bacon is thoroughly cooled, crumble or chop it coarsely.
In a large mixing bowl, whisk together the cocoa, sugar, and flour. Add to the dry ingredients the eggs (one at a time), the oil, and water, mixing just until batter is smooth. Spoon the mixture into the prepared pan.
Evenly sprinkle the maple bacon bits atop the brownies. sprinkle Smoked Bacon Salt over the bits.
Bake the brownies for about 35 minutes. When done, a toothpick inserted into the center will come out clean, or with a few damp crumbs clinging to it.
Remove the brownies from the oven, allow to cool five minutes before cutting into squares, and serve warm. Or cool to room temperature and refrigerate, covered, until ready to serve.
