This recipe took the first place OVERALL in our 2014 Rub Contest at the Iowa State Fair!!

INGREDIENTS

2- lb beef tenderloin roast, trimmed and tied
2 tsp Kosher Salt
1 Tbsp Black Pepper, Coarse Ground
2 tsp Smoked Hot Paprika
1 tsp Garlic Powder
1 Tbsp Worcestershire Powder
2 Tbsp vegetable oil

STEPS
Mix all spices together in a small bowl. Rub vegetable oil over all sides of the beef. Apply spice mix to every surface and massage into the beef. Wrap oiled, spiced tenderloin in plastic wrap and refrigerate several hours or overnight.

Cook tenderloin over hot coals, turning frequently, until roast reaches an internal temperature of 128 degrees. Remove meat from the grill and allow to rest 20 minutes. Slice and serve warm (will be rare to medium rare).
