INGREDIENTS
(Serves 6 to 8 )

Dressing:
1/2 Cup Extra Virgin Olive Oil
1/2 of a fresh lemon, squeezed
1/2 preserved lemon, chopped
1/4 tsp Vanilla Extract
1/2 tsp agave or honey
Smoked Sea Salt
Ground Pepper to taste

Salad:
1 bunch, or 5 oz package, of arugula
2 sweet organic crisp apples
Shaved Manchego or Parmesan cheese

STEPS

Mix together all ingredients for the dressing.
Shave thin rounds of apple, or halve the rounds, leaving the skin on.
Shave the cheese into ribbons or curls, as thinly as you can.
Pour dressing into the arugula, then add apple and cheese and gently toss to combine.
