Pisco is a kind of brandy, and in Colonial times, was a cheaper substitute for the Spanish liquor known as Orujo. Pisco is informally considered the national drink of Peru.

INGREDIENTS

Peruvian Chile-Citrus Sea Salt
Juice of 1/2 lime
1 egg white
2 Tbsp ultrafine sugar or Simple Syrup, or more to taste
1/4 Cup crushed ice
2 oz Peruvian pisco brandy (1/4 Cup)
Angostura bitters

STEPS

Pour Peruvian Chile-Citrus Sea Salt into a shallow saucer so that it is at least 1/8″ deep. Lightly dampen the rim of a martini glass, then turn the glass upside down into the salt saucer so that the rim is lightly coated with the salt mixture.

Combine all other ingredients in a cocktail shaker and shake vigorously to dissolve sugar and make egg white frothy. Strain cocktail into prepared martini glass.

Alternatively, rim an old fashioned or other short tumbler glass in the same manner described above. Combine all other ingredients in a blender, including the ice, making a slushy “frozen” style drink. Pour blended beverage into rimmed glass and serve.
