This is the homemade version of the mint syrup they use to make your fancy drinks at the coffee shop. Is a lovely addition to coffee, hot chocolate (try with our Cafe Blend Hot Chocolate), mochas or lattes, or in desserts. Maybe in Mojitos, too? YUM.
2 Cups granulated sugar
2 Cups water
1/4 tsp Peppermint Extract
Stir together the sugar and water in a heavy 2-quart saucepan. Heat over medium-low heat until the sugar completely dissolves. Turn up stove to medium and simmer until mixture has reduced a little, to syrup consistency. Add the peppermint extract and stir to combine. Remove from heat and allow to cool completely before transferring to a small “pourable” sealable container.
