INGREDIENTS

3/4 Cup milk
2 Tbsp White Vinegar
1 Cup all-purpose flour
2 Tbsp refined sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 egg
2 Tbsp butter, melted
cooking spray

Optional:
Cinnamon sugar
Maple sugar
Vanilla sugar
Butter
Real Maple Syrup
Fresh fruit, chopped

STEPS

Combine milk and white vinegar in a mixing bowl, and set aside for 5 minutes for liquid to sour.

Put flour, sugar, baking powder, baking soda, and salt in a large mixing bowl. Whisk egg and melted butter into the bowl of “soured” milk. Pour the dry ingredients into the wet ingredients and whisk until lumps are smoothed.

Meanwhile, slowly heat a large heavy skillet over medium heat for a few minutes, and spritz with cooking spray. Pour 1/4 cup of batter onto the sizzling skillet, and cook until bubbles appear on the surface of the pancake. Flip with a spatula, and cook until browned on the other side.

Top with butter and maple syrup, diced fresh fruit, and/or sprinkle with flavored sugar, if desired, before serving.

Yield: about eight pancakes
