3 large eggs, beaten
2 Cups granulated sugar
10 oz Persian Lime Olive Oil
2 oz lime juice
3 tsp lime zest
2 Cups all-purpose flour
1/2 tsp baking soda
1/2 tsp baking powder
1 tsp salt


Grease a 9×13 cake pan or line with parchment paper, while you preheat the oven to 350 degrees F.

In a mixing bowl, whisk together the eggs, sugar, Olive Oil, citrus juice, and lime zest until all ingredients are fully combined. In another mixing bowl sift together the dry ingredients: the flour, baking soda, baking powder and salt.

Mix the dry ingredients into the wet mixture, about 1/2 – 1 Cup at a time. Whisk until mixture is thoroughly blended.

Pour batter into the prepared pan. Bake on the middle rack in the oven for 45-60 minutes. bars are ready when a toothpick, inserted into the middle of the bars, comes out clean. They will be slightly gooey in the middle and cracked on the surface.

Remove bars from oven and allow to cool thoroughly on a wire cooling rack before serving.

    Ingredient list does not mention milk, but it is listed as an addition under directions. Please explain. Anxious to try this recipe.

      Thanks Christine – I meant to fix that typo and will do that now! Thanks. These are great and they turn out more like a bar than a cake.
