This recipe by Angela Lawler of West Des Moines took first place at our Frosted Cookie Contest at the 2013 State Fair!
2 sticks butter (1 Cup), room temperature
2 Cups sugar
1 Cup salad oil
5 Cups flour
1 tsp Vanilla Paste
1/2 tsp salt
2 tsp baking soda
Using an electric mixer on low speed, cream together butter and sugar. Add eggs, one at a time, beating for about one minute after each addition. Slowly add oil and beat until thoroughly incorporated, then add vanilla paste and the dry ingredients.
To form the cookies, drop a heaping teaspoon of dough onto cookie sheet. Flatten dough-blob with a glass dipped in sugar. Repeat until you have about 12 – 18 cookies on your cookie sheet.
Bake at 350F for 10 minutes. Remove cookies to a cooling rack and allow to cool at least 30 min.
Top the cookies with the orange-blossom frosting (recipe below).
Orange Blossom Frosting:
4 C confectioners’ sugar
1/2 Cup shortening
5 Tbsp milk
1 tsp Orange Blossom Water
Cream powdered sugar and shortening until smooth. Slowly add milk and orange blossom water. Mix until smooth and stiff. Spread liberally on the cookies.
