Here’s the deal on this fantastic recipe – We’ve given you two recipes to pick from: Do the first variation when you’ve got plenty of time and nothing sounds better than a couple hours in the kitchen. Use the second recipe when you’ve forgotten that your office potluck is tomorrow and you’re in a real pinch! Scratch is nice, but let’s be honest, so is easy!

Variation One: Lemon and Thyme Bars (from scratch)
INGREDIENTS

4 large eggs
1 1/2 Cups granulated sugar
3/4 Cup fresh lemon juice
1 tsp Lemon Extract
1 tsp Thyme Leaves
1/3 cup all-purpose flour
your favorite shortbread base recipe– hot and ready to go!
3 Tbsp confectioners’ sugar

STEPS

Preheat oven to 350°F.
In a bowl, whisk together eggs and granulated sugar until combined well. Stir in lemon juice, extract, thyme and flour. Pour lemon mixture over hot shortbread.

Reduce oven temperature to 300°F. and bake confection in middle of oven until set, about 30 minutes. Cool completely in pan and cut into 24 bars. These lemon-thyme bar cookies keep, covered and chilled, 3 days.

Sift confectioners’ sugar over bars immediately before serving.

Variation Two: Lemon and Thyme Bars (simplified)

INGREDIENTS

1 lemon bar box kit (and all the goodies you’ll need to go with it according to directions on back of the box)
1 tsp Lemon Extract
1 tsp Thyme Leaves
3 Tbsp confectioners’ sugar

STEPS

Preheat oven and prepare mix according to the directions on the box. Add in lemon extract and thyme during blending step. These “extras” will add enough zing that everyone will think it’s all homemade! Bake, cool & cut.

Sift confectioners’ sugar over bars immediately before serving.
