1 Cup sugar
1 Cup water
1 Tbsp Crushed Ginger (could also use diced crystallized ginger)
Bring ginger, sugar and water to a simmer in a small saucepan, stirring until sugar is dissolved, let reduce by almost half. Strain out ginger. Cool syrup completely.
Use in your favorite drink, over ice cream, or however you would like to sweeten up your next dish!
