INGREDIENTS
1-1/4 Cups cashews
1/2 Cup coconut
2 Tbsp water
1 Tbsp butter
1 tsp brown sugar
1 Tbsp sugar
2 tsp Curry Powder, Mild
1 Tbsp Persian Lime Olive Oil
1 tsp Lime Zest
3 Cups of your favorite Chex cereal
1 tsp Lime Fresco Salt
2 tsp Crystalized Ginger, Diced

STEPS
On a rimmed cookie sheet, spread out the nuts in a single layer. Toast at 350° F for 4 minutes, stir and return to oven to toast 4 more minutes. Sprinkle the coconut over the cashews, and then toast 2 more minutes.

In a large pan on the stove, bring the brown sugar, water and butter to a boil. Add the curry powder, olive oil, and lime zest.

When mixture boils, stir in the toasted nuts, coconut, and cereal, stirring until the water is evaporated.

Transfer spiced snack mix back to the cookie sheet. Distribute evenly over the baking sheet and sprinkle snack mix with the salt and crystalized ginger. Allow to cool completely.
