2 Tbsp Extra-Virgin Olive Oil
2 cups quick-cooking oats
1 cup chopped walnuts
1/2 cup plus 2 Tbsp sunflower seeds
6 Tbsp Whole Sesame Seeds
1 tsp Ground Cinnamon
1 cup honey
2/3 cup light-brown sugar
6 Tbsp unsalted butter
Preheat oven to 325 degrees. Brush a large rimmed baking sheet with unflavored olive oil; set aside. In a large bowl, combine oats, walnuts, sunflower seeds, and cinnamon.
In a medium pan over medium heat, stir honey, sugar, and butter until combined. Pour over oat mixture and toss.
In baking pan, spread mixture in a thin layer. Bake for 20 min, then flip granola; bake for 15 min more. Turn off oven and let granola sit in the cooling oven for 10 min. Transfer pan to a wire rack to cool. Break granola into pieces.
Allow to cool completely before storing in sealable container.
