INGREDIENTS
Note – this makes a lot of sliders!
Burgers:
3 lbs ground beef
2 large eggs, lightly beaten
1/2 Cup Cheddar-head Seasoning
2 tsp Cayenne chile, ground
1/2 cup chopped fresh parsley
2 small garlic cloves, crushed with a garlic press
1 Tbsp Worcestershire Sauce

30 (2-inch; a.k.a. “party size”) soft rolls, such as potato and brioche, or mini pitas
Sliced cheese (your favorite cheese will be perfect!)

Toppers:
lettuce, sliced tomatoes, coleslaw, pickles, sliced raw onion and/or sautéed golden brown onions, ketchup, mayonaise

STEPS
Lightly beat the eggs, and combine with ground beef, Cheddar-head seasoning, fresh parsley and garlic, Worcestershire, Cayenne, 1 tsp salt and 1/2 tsp pepper with your hands until just combined. (Fight the urge to over mix.)

Using a 1/4 Cup measuring cup, scoop beef mixture and form meatballs by hand. This recipe will yield about 30. Flatten each ball slightly, making a roughly 2-inch diameter disk.

Prepare grill by heating all burners on highest setting. Adjust heat to medium-high just before grilling the patties. Grill mini-burgers. Flip burger once, add cheese, and continue to grill until just cooked through, 4 to 8 min total. Remove burgers from grill and place on tiny buns or rolls. Serve immediately, and let everyone dress up their burgers with the toppings.
