Solera is a process for aging liquids such as wine, beer, vinegar, and sherry. In the solera process, a succession of containers [like wooden casks] are filled with, say, vinegar, and aged for a period of time [say, a year]. At the end of that time, the oldest container is tapped and bottled. Then that oldest barrel is filled with vinegar from the next-oldest container; then the next-next-oldest barrel is filled with vinegar from the slightly younger barrel next to it, and so on, down to the youngest barrel, which is filled with new vinegar.
