Pure lime zest, just like our lemon zest. This granulated peel is useful for marinades and rubs that require a citrus flavor.
Zest is the colorful outer peel of citrus fruits, such as lemon, orange, citron and lime. Zest is called for in recipes to add flavor ["zest"] to foods and beverages.
Zest is obtained by grating bits of citrus peel from the outside of the fruit: longer decorative bits [a "twist"] for garnishes in drinks like martinis, finer grated bits for desserts and savory rice dishes. Zest is a critical ingredient in a number of condiments, jam and pickle recipes, bringing just the right amount of tartness to balance the other ingredients.
Our lime zest is dehydrated and coarsely ground. Lime zest is a nice addition to any Caribbean or [Jamaican] jerk seasoning or tropical recipe. Gazing to the west, lime zest appears often in Pacific Rim fusion cuisine -- melding West coast, Pacific Island, and Far East sensibilities.
Try a bit of our Lime Zest in marinades, vinaigrettes, fruity salsas, and other sauces and dressings. In recipes where fresh lime zest is called for, reconstitute dehydrated lime zest by soaking in water for 15 minutes; drain excess water before adding to dish.
