Americans consume a mind-boggling amount of money on condiments each year. How mind-boggling? In 2014, we spent over $2 billion a year just on mayonnaise alone, and bought hundreds of millions of bucks' worth each of ketchup, mustard, and hot sauce.
We love to doctor up so much of what we eat with a little bit of this condiment, or that. These additions spice up plain foods, add zip to our simple sandwiches, make ho-hum recipes taste more exciting.
So we got to thinking: now that we have access to incredible balsamic vinegars and olive oils, we never buy pre-made dressings and marinades anymore. So if it's such a staple in our pantry, why do we still buy store-bought mustards, when we can easily make even better stuff on our own?
Retired AllSpicer Denise gave us her fabulous mustard recipe and gave us permission to make it part of our new Denise s Mustard Kit so we can share it with you.
Denise's Mustard Kit contains the (not-so) secret ingredients that make it the best companion to your brats (and your burgers, hot dogs, and ham sandwiches!): 5 oz bottle of Champagne vinegar, 1/2 Cup of ground Yellow Mustard, 1/4 cup Kosher salt, and the recipe card for $12.00.
It's ridiculously simple to make: Stir the ground mustard and vinegar together and let stand overnight at room temp in a covered jar. The next day, stir eggs, salt, and sugar into vinegar mustard mixture and cook in a double boiler for 15 mins until it thickens. The mustard will set up and thicken more as it cools. Put into sterile jars.
