The Limited Private Reserve “Molto Denissimo” (which translates to “Extra Dense”) balsamic is made in Modena, Italy of Trebbiano grape must. The vinegar is slowly cooked and caramelized, its volume reduced in copper kettles, and then slowly aged in the traditional “Batteria” of Modena, a succession of barrels of different aromatic woods (including mulberry, ash, oak, juniper, and cherry wood).
Our exclusive Denissimo Reserve Balsamic contains a trace (less than 1%) of barrel-aged Italian red wine vinegar for pro-biotic effect. Extra dense (batch certified 1.36+ density), this exquisite and exceedingly limited balsamic is extraordinarily complex, boasting flavor notes of cherry wood, dried fruits, raisins, figs, along with hints of dark chocolate and malt.
The rich and complex taste of Denissimo Reserve Balsamic is delicious enough for it to stand alone, but we love it as a partner to a cheese or charcuterie plate, drizzled over fresh melon or dark ripe berries, topping grilled vegetables or poultry, or as a glaze for a perfect pork roast. Spoon some Denissimo Reserve Balsamic over a flourless chocolate torte or cheesecake, or, better yet, as a perfect finishing touch for homemade vanilla ice cream.
