The premium Riserva di Balsamico is made in Modena, Italy from Trebbiano grape must. The vinegar is slowly cooked and caramelized, its volume reduced in copper kettles, and then slowly aged in the traditional “Batteria” of Modena, a succession of barrels of different aromatic woods (including mulberry, ash, oak, juniper, and cherry wood).
Extra dense, this exquisite and exceedingly limited balsamic is extraordinarily complex, boasting flavor notes of cherry wood, dried fruits, raisins, figs, along with hints of dark chocolate and malt.
The rich and complex taste of Riserva Di Balsamico is delicious enough for it to stand alone, but we love it as a partner to a cheese or charcuterie plate, drizzled over fresh melon or dark ripe berries, topping grilled vegetables or poultry, or as a glaze for a perfect pork roast.
