Good Eats: Pestos, vinaigrettes, bread dips, and seafood.

Perfect Pairs: Virtually every balsamic and wine vinegar.

Ingredients: Extra Virgin olive oil

Arbequina extra virgin olive oil has a high fruitiness, balanced pungency, and a very pleasing clean taste. With a buttery, slightly nutty flavor and a mild peppercorn finish, Arbequina oil is an indulgent treat.

The Arbequina olive tree takes its name from a village in Catalonia, Spain, where it was introduced hundreds of years ago. A tree that adapts to its climate and surroundings, the Arbequina has recently become the biggest variety of olive grown in California. Arbequina olive oil is generally very mild in flavor, being low in polyphenols. The lower polyphenol level gives Arbequina a shorter shelf life [but that doesn't matter: it is so tasty you will eat it up quickly!]

Arbequina is a great all-purpose, sunny golden olive oil. Use in salads and soups, or drizzle over vegetables. We have even seen it in recipes for chocolate mousses and ice creams!

Olive Oil, comes from olives, which are the fruit of the hardy, long-lived olive tree. Olive oil is a hugely popular oil throughout the world, both for cooking and for eating as a condiment [like a salad dressing, or a bread dip, or in a sauce] with foods. Extra virgin olive oil is considered by most people to be the highest-quality olive oil, with the finest taste and texture.

Choosing an olive oil can be similar to selecting a wine. The flavor of these oils vary considerably and a particular oil may be more suited for a particular dish, depending on whether you are pan-frying, sautéing, stir-frying, grilling or baking...or whether you are using the oil for marinades, dips, and dressings. If uncompromised by heat, the flavor of the olive oil is stronger.
