This Watermelon Ice sits somewhere between a snow cone and a sorbet, and it's exactly what you'll want when it's hot outside. Made with fresh watermelon and our Watermelon Mint Fruit Vinegar, it's light, refreshing, and super easy to make. Enjoy it on its own, mix into soda water, or add a splash of watermelon vodka if you're feeling festive. However you serve it, finish it with a drizzle of Watermelon Mint Fruit Vinegar on top. It's summer in a bowl.
Fresh watermelon is pureed with a fruity herbal tea simple syrup and our Watermelon Mint Fruit Vinegar, then frozen and broken into chunks before a final blend for a light, icy dessert that's as refreshing as it gets.
Make a simple syrup by placing sugar and prepared fruity herbal tea in a small pot. Bring to a simmer and stir until the sugar dissolves.
Place the fresh watermelon, vinegar, and simple syrup in the bowl of a blender and puree until smooth.
Line a 7x11 metal cake pan with plastic wrap, letting it hang over the edges. Pour in the watermelon mixture. Place in the freezer and freeze until solid, at least 6 hours or overnight.
Turn the block of watermelon ice onto a cutting board. Use the plastic wrap to help lift it out. With a fork or sharp knife, break the block up into chunks.
Place the blocks into the blender, blend again, and scoop and serve.
