Ingredients
2 C. All-Purpose Flour
1 tsp. Baking Powder

1 tsp. Sea Salt, Fine

2 tsp. Apple Pie Spice Blend
1 ½ C. Unsalted Butter (Softened)
1 C. Granulated Sugar
1 C. Brown Sugar (Packed)
2 Large Eggs

1 ½ tsp. Vanilla Extract, Mexican
3 C. Old Fashioned Oats
1 C. Raisins
Directions
Prepare by preheating your oven to 375° F. Next, line baking sheets with parchment paper or a non-stick pad.
Combine flour, baking powder, Fine Sea Salt, and Apple Pie Spice in a bowl. Set aside.
In a separate bowl, cream together the sugar, brown sugar and butter with an electric mixer until light and airy. Slow down the mixer and add Vanilla Paste or Extract and eggs.
With the mixer on the slowest setting, slowly add in the flour mixture. Be sure to scrape down the edges of the bowl to ensure everything is combined, and then add the raisins.
Spread the dough into equal portions on the cookie sheet, leaving space between so they don’t bake together. Bake for 13-15 minutes – the cookies should have light brown edges. Cool on the baking sheets for 4-5 minutes before moving to a cooling rack.
