Mediterranean Grain Bowls
This recipe uses a single pan to make a delicious Mediterranean grain bowl. Substitute vegetable stock and vegan feta cheese to make this recipe vegan.

Ingredients

16 oz. Coarse Bulgur Wheat

1 Large Handful Fresh Spinach

15oz Can Chickpeas (Drained)

8 oz. Jar Sun-dried Tomatoes (Drained)

15 oz. Can Artichoke Hearts (Drained and Quartered)

1 C. Red Onion (Chopped)

1 Tbsp. Garlic (Finely Chopped)

1 tsp. Greek Seasoning

1 tsp. Sea Salt, Fine

1 Tbsp. Lemon Juice (plus extra for finishing)

2 Tbsp. Extra Virgin Olive Oil

3 ½ C. Chicken Broth
-
Crumbled Feta Cheese (for finishing)

Fresh Parsley (for finishing)
Directions
Preheat the oven to 400°F.
Combine all the ingredients in a casserole dish. Bake for 40 minutes.
Remove casserole dish from the oven and top with feta, parsley, and a squeeze of lemon juice.
Recipe Note
If you prefer orzo or couscous over bulgur wheat, make the substitution. Reduce the broth 1 C. if using orzo or couscous.
