Garlicky Grilled Chicken

2 lbs. Boneless, Skinless Chicken Breasts

4 Cloves Garlic (Peeled)

1 tsp. Sea Salt, Fine

½ C. Lemon Juice

1 tsp. Paprika, Smoked Sweet

Black Pepper, Fine Ground
Directions
Cut each chicken breast in half and set aside.
Coarsely chop the garlic cloves and, in a small bowl, crush the garlic pieces with the sea salt using the back of a spoon (or a mortar and pestle) until you have a smooth garlic/salt paste.
Stir in the lemon juice, olive oil, paprika, and black pepper. Whisk the marinade well to combine and pour the liquid over the chicken pieces in a large covered dish or resealable bag, coating well. Allow the chicken to marinate for at least 4-5 hours (or overnight).
Remove the chicken from the refrigerator and allow them to return to room temperature before grilling.
Grill over medium-high heat (we like to have our chicken approximately 8” from the flame to avoid scorching). Chicken should take approximately 8-10 minutes per side to cook (ensure it’s cooked to an internal temperature of 165°F). Baste frequently with the remaining marinade while it cooks.
Serve with risotto, couscous, rice pilaf, and/or veggies.
Recipe Note
Substitute unflavored Extra Virgin Olive Oil for our Eureka Lemon Fused Olive Oil or Garlic Infused Olive Oil for a tasty variation of the recipe.
