Ingredients: 1 Chicken Breast (Grilled or Roasted), Diced; 1 Stalk Celery, Diced; 1/2 Red Apple, Diced; 1/4 C. Toasted Peans, Chopped; 1/4 C. Raisins or Currants; 1/4 Red Onion, Diced; 1/3 C. Mayonnaise (Note: you may need more as the salad "sets."); 1/2 tsp. Curry Powder, Madras; 1/8 tsp. Cayenne, Powder; Sea Salt, Fine, To Taste

Ingredients

1 Chicken Breast (Grilled or Roasted), Diced
1 Stalk Celery, Diced
1/2 Red Apple, Diced
1/4 C. Toasted Peans, Chopped
1/4 C. Raisins or Currants
1/4 Red Onion, Diced
1/3 C. Mayonnaise (Note: you may need more as the salad "sets.")
1/2 tsp. Curry Powder, Madras
1/8 tsp. Cayenne, Powder
Sea Salt, Fine, To Taste

Directions

Cook chicken breast and prepare other ingredients.
Toss everything together in a bowl and fold to mix thoroughly. Chill the salad well prior to serving.
Serve on your favorite croissant, bread, or over salad greens.

Recipe Note

Use Curry Powder, Mild, Curry Powder, Hot, or Vadouvan Curry Blend in place of Curry Powder, Madras if you prefer.
