Ingredients
1 Medium Onion (Chopped)
2 Tbsp. Extra Virgin Olive Oil
3 Cloves Garlic (Peeled & Chopped)

2 tsp. Ras El Hanout

2 Tbsp Crystallized Ginger (Diced Finely)
4 Boneless, Skinless Chicken Breasts
2 C. Chicken Stock
1 C. Plums or Apricots (Diced)
Directions
Preheat oven to 350°F.
In an oven-proof, sauté pan with lid, cook onions in olive oil until softened. Add garlic, Ras El Hanout and chopped ginger. Cook an additional 2-3 minutes over medium heat.
Remove onion mixture from the pan and add chicken to the pan (add more oil if necessary). Cook approximately 2 minutes per side. Return the onion mixture to the pan and add the dried plums or apricots and chicken stock.
Cover and place in the oven for 20 minutes, turning the chicken halfway through cooking time.
