Ingredients

For the Yogurt Sauce:

1 C. Plain Yogurt

¼ C. Fresh Mint (Chopped)

Kosher Salt (to Taste)

1 ½ lbs. Lean Ground Lamb

1 Small Onion (Peeled and Coarsely Grated)

¾ C. Bread Crumbs
-
2 Cloves Garlic (Peeled and Minced)
-
1 ½ Tbsp. Baharat Spice Blend
-
¾ tsp. Kosher Salt
-
1 Large Tomato (Sliced)
-
1 Small Cucumber (Sliced on the Bias)
-
3 Tbsp. Fresh Cilantro

For the Pitas:

Prepare the Yogurt Sauce:
Combine the yogurt, fresh mint, and sea salt to taste. Place in an airtight container in the refrigerator until ready to serve.
Prepare the Pitas:
Combine the ground lamb, grated onion, breadcrumbs, garlic, Baharat Spice Blend, and salt and mix thoroughly (your clean hands are the best tool!).
Divide the mixture into equally-sized oval patties so they will fit easily within the pita.
Preheat grill to high heat. Grill the lamb burgers for 4-5 minutes per side. Transfer the burgers to a plate and briefly grill the pitas to warm them and char slightly, but do not let them crisp.
Spread the inside of each pita with the yogurt sauce. Add a tomato slice or two, a few fresh cucumber slices, and some cilantro to the pita, then add your lamb patty.
