This unique recipe for roasted asparagus includes cheese, mayonnaise, hardboiled eggs, and anchovies - nearly everything but the kitchen sink! It's a great alternative to plain grilled or roasted asparagus you're sure to love.
In a large bowl, toss asparagus with oil and salt. Spread seasoned asparagus on a baking sheet and roast, stirring once halfway through, until tender, 15 to 20 minutes. Remove from oven and allow to cool for 5 minutes.
Meanwhile, in a separate small bowl, combine mayonnaise, cheese, water, anchovies, garlic and lemon juice. Drizzle the asparagus with the sauce and top with the chopped hard-boiled eggs.
Recipe Note
To reconstitute our dried minced garlic, place in a small dish and add boiling water - just enough to cover. Allow the dried garlic to absorb the water for 4-5 minutes, then drain off any excess water. Use as you would fresh garlic.
