1 C. Diced Cucumber (Unpeeled)

½ C. Green Onion (Thinly Sliced)

½ C. Diced Red Bell Pepper

¼ C. Cilantro Leaf

2 Tbsp. Soy Sauce
 - 
                
                
1 Tbsp. Cucumber Melon White Balsamic Vinegar
 - 
                
                
¼ tsp. Garlic, Minced
 - 
                
                
½ tsp. Roasted Sesame Oil
 - 
                
                
¼ tsp. Red Pepper Chile, Crushed
 
Directions
Combine all prepared ingredients in a bowl and stir until everything is well incorporated. Refrigerate until ready to serve. Makes about 2 cups of salsa.
Recipe Note
You can substitute fresh cilantro and garlic if you have them on hand, just double the amounts.
