Spotlight Spice: Wild Game Rub

Wild Game Rub

Hunting season is nearly upon us here in the Midwest, and soon you may find yourself trying your hand at preparing wild game like pheasant, wild turkey, duck, or venison.

Wild game has a stronger, more intense flavor than domesticated meat, and stronger-flavored herbs and spices are needed to tame the flavor. Our Wild Game Rub – a blend of garlic, salt, chiles, onion, turbinado sugar, juniper berries, and other spices – is just that!

The bold flavor of juniper berries has a bold flavor with piney, peppery, and fruity notes which is a good match for wild game meat. The salt, chiles, garlic, and other herbs and spices add balance and the turbinado sugar adds a touch of sweet, almost caramelly flavor to the mix.

We recommend using the blend as dry rub or in a marinade. Try combining a cup of Extra Virgin Olive Oil, 1/4 cup of Red Wine Vinegar, 1/4 cup lemon juice, and a tablespoon or two of Wild Game Rub to create a tasty marinade.

Whether your recipe is wild or farm-raised, Wild Game Rub is sure to become a staple for your hearty dishes!
