Spotlight Spice: Aji Amarillo Chile Powder
This week’s Spotlight Spice is a Peruvian staple – it’s our Aji Amarillo Chile Powder. The chile, whose name translates to ‘yellow chile’ is found everywhere in Peruvian cuisine – particularly in ceviche, soups, and sauces.
Aji Amarillo chiles ripen from a bright, cheerful yellow to a deep orange and packs moderate heat balanced by a fruity sweetness. Originating in the Andean valleys, the chile has been around for thousands of years and, while quite popular in regional cuisine, is still a bit of an obscure ingredient elsewhere.
Our Aji Amarillo Chile Powder is great in salsa, ceviche, stews, sauces, rice dishes, and sprinkled over meats and veggies for color and rich fruity and spicy flavor.
Try using it to make a traditional Aji Amarillo Sauce – a versatile ingredient for dipping all sorts of things (think French fries, veggies, etc.) or for dressing grilled chicken, roasted potatoes, and fish. To make it, you'lll need the following ingredients:
- 1/2 C. mayonnaise
- 1/4 C. sour cream
- 1/4 C. ricotta or feta cheese
- 2 Tbsp. Aji Amarillo Chile Powder
- 1 Tbsp. Ketchup (we're partial to Ketchup Please - Original Flavor)
- 1/4 C. lime juice
- Fine Sea Salt (to Taste)
- Fine Ground Black Pepper (to Taste)
- 1 Clove Garlic (Peeled and Chopped)
- 2 Green Onions (Chopped)
Preparation couldn't be easier. Just chuck all but the salt and pepper into a blender or food processor and blend until smooth. Add salt and pepper to taste, then place in the fridge until you’re ready to use.
