Fleur De Sel
Fleur de Sel [literally "flower of salt"] is hand-harvested sea salt skimmed from the top of salt ponds. Fleur de Sel is an all natural sea salt, but is unlike any salt you've ever tasted.
Unprocessed, unrefined, unchanged from its natural condition.
Fleurs de sel are moist salts - that is, they retain some moisture due to their manner of harvesting. As a result, fleur de sel flakes do not dissolve when sprinkled on a moist food just before serving: they retain their crystal structure, the light, delicate flakes giving a slight crunch to the food as well as a slight shimmer.
That being said, though, the small delicate crystals of fleur de sell *will* dissolve more quickly than regular salt if used earlier in the cooking process. Fleur de sel is best used as a finishing salt, sprinkling it on dishes right before serving.
Fleur de sell is used in salads, on grilled meats, in fancy butters and on vegetables. For an unusual holiday confectionery, lightly dust homemade truffles or chocolates with a sparkly bit of fleur de sel. The salt brings out the chocolate flavors like you wouldn't believe!
