White Truffle Oil
Our White Truffle oil is made using the "tea" method, which steeps rich white truffles for extended periods of time in olive oil. This closely-guarded, proprietary process yields our intense, smooth white truffle oil.
Truffles are rare, extraordinarily delicious fungi. The 18th-century French gastronome Brillat-Savarin called these truffles "the diamond of the kitchen." Truffles are held in high esteem in French, Spanish, northern Italian and Greek cooking.
White, or Alba, truffles grow symbiotically at the foot of oak, hazel, poplar, and beech trees, most often found in in Northern Italy [around Piedmont and Alba]. White truffles have a more delicate taste than their black-truffle cousins, and have a garlic-like aroma. White truffles are usually not cooked, but are thinly shaved and served with meats or poultry, in pate, or in stuffings or fancy cheeses.
White Truffle Oil can be used as a finishing oil in any recipe that might call for the fancy fungus. White Truffle Oil is delicious with eggs, pasta with cheese, and, of course, any risotto recipe. White Truffle Oil is a decadent addition to popcorn, and confers rich truffle taste to homemade aloe. For the most elegant, simple salad, drizzle White Truffle Oil over sliced heirloom tomatoes and fresh mozzarella cheese. Buon Appetito!
