Hardstick or Cinnamomum Cassia has a more intense aroma than "true" cinnamon. Sweet with a distinct pungency and astringent edge when broken or ground. Very hard to grind, then sticks are most often used whole and removed before serving.
Softstick or Cinnamomum Verum has thin, birch-like layers. The "true" cinnamon has a much softer and delicate flavor than Cassia. Best used where its delicate, slightly citrusy, taste is not overwhelmed by other strong flavors. Easy to grind at home, unlike hardstick.
